Healthy Chicken Waldorf Salad

Chicken Waldorf salad is one of my favorite chicken salad recipes for the summertime.

It has some sweetness with the added fruit, but tang from the lemon, making this dish an elevated version of the classic recipe.

Ingredients:

1 rotisserie chicken, shredded

1 granny smith apple, diced

1/2 cup of walnuts, chopped

1 cup of red grapes, diced

2 Tablespoons of Primal Kitchen mayo

Half a lemon, juiced

2 to 3 drops of doTERRA lemon essential oil (or sub with lemon zest)

Salt and pepper to taste

Method:

1. Mix together in a large bowl mayo and lemon juice. Add shredded chicken and mix to combine.

2. Add in grapes, apple, walnuts, and lemon essential oil. Stir to combine. Add salt and pepper and serve. Enjoy!
