Healthy Chicken Waldorf Salad

Here's one of my favorite throw together chicken salad recipes:


Waldorf Chicken Salad:
1 organic rotissere chicken
1 granny smith apple, diced
1/2 cup walnuts chopped
1 cup red grapes diced
1 tablespoons of Primal Kitchen mayo mixed with a squeeze of fresh lemon juice.


Mix all together and keeps in the fridge for up to 5 days.

I love to add this mixture to romaine lettuce cups or over spring mix with some diced avocado.
