Baked Coconut Rice

Baked coconut rice makes a simple and delicious side to your next meal. 🍚

It has more of a buttery rice flavor in my opinion, than coconut. It you want more of the coconut flavor, you can always top with shredded unsweetened coconut when you serve it up.

Ingredients:

1 cup of water

1 can of coconut milk

1 to 2 Tablespoons of butter

Few pinches of pink salt

1 1/2 cups of Jasmine rice

Method:

Preheat oven to 375.

1. In a saucepan, add water, coconut milk, butter, and salt. Let it come to a boil and remove from heat and stir.

2. In a baking dish, add dry jasmine rice.

3. Add saucepan mixture to the rice and stir. Cover or you can use aluminum foil to cover, but be sure it's tight around the baking dish.

4. Bake at 375 for 65 minutes and then let cool slightly before serving. Enjoy!
